VINIFICATION AND REFINING — The harvest is performed entirely by hand in crates with subsequent gentle destemming. Fermentation in steel lasts about 15-20 days at controlled temperature. Aging in barrique lasts about 6 months. After this period, the final blending and bottling are done with an additional aging period in the bottle of at least 3 months.
