TYPE OF CULTIVATION — Single Guyot
VINIFICATION AND REFINING — Harvest done entirely by hand in crates with subsequent soft destemming. Temperature-controlled fermentation on the skins. This is followed by spontaneous malolactic fermentation in wooden barrels. The wine then undergoes an aging period of about 18 months in tonneaux and barriques. After bottling, a further period of bottle aging follows.
ORGANOLEPTIC CHARACTERISTICS — Soft ruby red color with garnet hints. Notes of small red fruits, such as currant and raspberry, accompanied by spicy scent of white pepper. Hints of subtle sweetness resulting from aging in oak barrels. The palate is intense, taut and vibrant, with silky and elegant tannins. The general balance gives a harmonious and enveloping drink.
DRINK WITH — Ideal pairing with white meat dishes, cured meats, cheeses and lightly spiced preparations. Excellent with duck ragout or beef tartare.
LONGEVITY — 8-10 years.
SERVE AT — 15-16°C.
