VINIFICATION AND REFINING — Harvest is conducted entirely by hand in crates with subsequent gentle destemming. Fermentation in steel lasts about 30-40 days at controlled temperature. Aging in barriques lasts about 36 months. After this period, the final blending and bottling are conducted, followed by an additional aging period in the bottle of at least 2 years.
ORGANOLEPTIC CHARACTERISTICS — Intense garnet red in color, the nose suggests licorice, wild berries, and vanilla. On the palate, it is robust, with balanced tannins and great persistence.
DRINK WITH — first courses with ragout sauce, grilled meat in general, game and matured cheeses.
LONGEVITY — 10 – 12 years.
SERVE AT— 17-18°C.
