VINIFICATION AND REFINING — The two blend varieties are harvested according to their individual ripening needs, between mid-September and mid-October. The grapes are picked and vinified separately, both by variety and by plot.
Fermentation takes place in 3.5 hl terracotta amphorae. After fermentation, the wine is further refined in amphora.
ORGANOLEPTIC CHARACTERISTICS — Soft pink colour with hints of salmon. The nose is concentrated and elegant, with olfactory reminiscences suggesting a complex range of white-fleshed fruit aromas enriched by notes of red fruits and a final citrus note: peach, raspberry, pomegranate and pink grapefruit.
DRINK WITH — Excellent with lamb. seafood appetizers, crudités, and soft cheeses.
LONGEVITY — 4-5 years.
SERVE AT — 10-12°C.
