VINIFICATION AND REFINING — Hand-picked harvest. Cold maceration in the press. Must clarification through cold settling. Fermentation takes place 20% in French oak barriques and 80% in stainless steel tanks. After an aging period of 6-8 months, the wine is blended and bottled.

ORGANOLEPTIC CHARACTERISTICS — Brilliant straw yellow in color, it has an intense and complex nose with an elegant and refined bouquet. Notes of acacia flowers, dried fruit, and white pepper. On the palate, it is enveloping yet delicate, with flavors of yellow peach and vanilla. Salty and persistent.

DRINK WITH — Fish-based first courses, sushi, and chicken salads. Also pairs well with stewed rabbit.

LONGEVITY — 6 – 8 years.
