VINIFICATION AND REFINING — Hand-picked harvest. Gentle destemming. Fermentation at a controlled temperature on the skins. Aged for 16 months in oak barriques. After this period, the wine is blended and bottled, followed by further aging in the bottle.

ORGANOLEPTIC CHARACTERISTICS — Ruby red in color, with an intense, spicy nose. Notes of wild berries. On the palate, it is dry, bold, and persistent, with hints of black cherry and vanilla.

DRINK WITH — Grilled red meats, stewed meats, and game. Excellent with aged cheeses.

LONGEVITY — 10 – 12 years.

SERVE AT — 16-18°C.
