VINIFICATION AND REFINING — Hand-picked harvest. Cold maceration in the press. Must clarification through cold settling. Fermentation takes place 20% in French oak tonneaux (500 liters) and 80% in stainless steel tanks. After an aging period of 6-8 months, the wine is blended and bottled.

ORGANOLEPTIC CHARACTERISTICS — Yellow with greenish highlights, it has an intense, balsamic, and aromatic aroma. Notes of green pepper, tomato leaf, white peach, and pineapple. On the palate, it is lively and direct, with ripe fresh fruit, herbal, citrusy flavors. Salty and very persistent.

DRINK WITH — Primi piatti a base di verdure, risotto agli asparagi. Tataki di tonno, sauteè di cozze, rombo al forno con patate e rosmarino.

LONGEVITY — 6 – 8 years.

SERVE AT — 10-12 °C.
