VINIFICATION AND REFINING — The harvest is performed entirely by hand in crates with subsequent gentle destemming. Fermentation in steel lasts about 15-20 days at controlled temperature. The aging lasts 18-20 months and occurs inside 50hl wooden barrels. After this period, the final blending and bottling are done with an additional aging period in the bottle of at least 3 months.
ORGANOLEPTIC CHARACTERISTICS —It is a garnet red color. On the nose it is intense and recalls raspberries and cherries. On the palate it is fruity, full-bodied with velvety tannins.
DRINK WITH — Matured cheeses, grilled red meat, game in various dishes, typical Tuscan cold-cuts (for example: Finocchiona).
LONGEVITY — 6 – 10 years.
SERVE AT —16–18°C.
