VINIFICATION AND REFINING — The harvest is performed entirely by hand in crates with subsequent gentle destemming. Fermentation in steel lasts about 30-40 days at controlled temperature. The aging in 25hl wooden barrels lasts about 30 months. After this period, the final blending and bottling are done with an additional aging period in the bottle of at least 6 months. 

ORGANOLEPTIC CHARACTERISTICS — Intense garnet red in color, the nose suggests licorice, wild berries, and vanilla. On the palate, it is robust, with balanced tannins and great persistence.

DRINK WITH — First courses with ragù-based sauces, grilled meats in general, game, aged cheeses.

LONGEVITY — 10 – 12 years.

SERVE AT — 17°-18°C.
