VINIFICATION AND REFINING — Hand-picked harvest. Cold maceration in the press. Must clarification through cold settling. Fermentation takes place 50% in French oak barriques and 50% in stainless steel tanks. After an aging period of about 8 months, the wine is blended and bottled.
ORGANOLEPTIC CHARACTERISTICS — Intense straw yellow with golden highlights, it has a rich, floral, and fruity nose. Notes of ripe peach, nutmeg, and vanilla. On the palate, it is silky, enveloping, soft, and dry, with a classic toasted almond and spiced finish. Salty and very persistent.
DRINK WITH — Ideal with San Daniele prosciutto as an aperitif. Grilled fish, eel, shellfish, and spaghetti with sea urchins. Excellent with medium-aged raw-milk cheeses.
LONGEVITY — 10 – 12 years.
SERVE AT — 10-12 °C.
