VINIFICATION AND REFINING Hand-picked harvest in small crates, gentle destemming, and subsequent fermentation at a controlled temperature of 23°C for eighteen days on the skins. Maturation occurs 30% in barriques and 70% in stainless steel tanks at a constant temperature of 16°C. After this period, the final blending is carried out, followed by bottling and further aging in the bottle.

ORGANOLEPTIC CHARACTERISTICS Garnet red tending towards violet, with an intense and pleasant herbaceous aroma and notes of wild blackberry and underbrush. On the palate, it is savory, slightly tannic, with a full body and a bitterish, persistent, and pleasant aftertaste. Young, vinous, fragrant, robust, and full-bodied.

DRINK WITH Grilled meats and game, cured meats, and aged cheeses.

LONGEVITY  5-7 years

SERVE AT 16–18°C.
