VINIFICATION AND REFINING — Hand-picked harvest in small crates, gentle destemming, and subsequent fermentation at a controlled temperature of 23°C for eighteen days on the skins. Maturation occurs 30% in barriques and 70% in stainless steel tanks at a constant temperature of 16°C. After this period, the final blending is carried out, followed by bottling and further aging in the bottle.
ORGANOLEPTIC CHARACTERISTICS — Garnet red tending towards violet, with an intense and pleasant herbaceous aroma and notes of wild blackberry and underbrush. On the palate, it is savory, slightly tannic, with a full body and a bitterish, persistent, and pleasant aftertaste. Young, vinous, fragrant, robust, and full-bodied.
DRINK WITH — Grilled meats and game, cured meats, and aged cheeses.
LONGEVITY — 5-7 years
SERVE AT —16–18°C.
