TYPE OF CULTIVATION —Guyot, capovolto

VINIFICATION AND REFINING — Hand-picked harvest. Gentle destemming and cold maceration in the press. Fermentation at a controlled temperature. Must clarification through settling. Fermentation in oak barriques under controlled conditions. Aged in wood for 8-10 months, followed by blending in stainless steel tanks. Further maturation in the bottle for about 1 year before release.

ORGANOLEPTIC CHARACTERISTICS — Straw yellow with golden highlights. Aromatic and floral notes give way to fresh fruit, vanilla, and spice aromas. On the palate, it is rich, harmonious, and enveloping. With great structure and elegance, it offers remarkable persistence.

DRINK WITH — Fish-based first courses, shellfish, salt-crusted sea bass, and gratinated scallops. Excellent with beef carpaccio, stewed rabbit, spit-roasted chicken with lard, and oven-baked goat with vegetables.

LONGEVITY — 10 -15 years.
SERVE AT — 12-13 °C.
