VINIFICATION AND REFINING — Hand-picked harvest. Cold maceration in the press. Must clarification through cold settling. Fermentation takes place 20% in French oak barriques and 80% in stainless steel tanks. After an aging period of about 8 months, the two varieties (50% and 50%) are blended and subsequently bottled.

ORGANOLEPTIC CHARACTERISTICS — Golden yellow in color, it offers an intense, clean, fruity, and floral aroma. Notes of acacia flowers, chamomile, peach, and papaya. On the palate, it is savory and persistent, with beautiful minerality.

DRINK WITH — Generally suitable for appetizers, especially cured meats and fresh cheeses. Pairs well with spaghetti with zucchini, shrimp, and saffron, grilled sea bass, and grilled chicken with roasted potatoes.

LONGEVITY — 6 – 8 years.

SERVE AT — 10-12 °C.
